Things Chickens and Chickens/Hens/Hands SHOULD NOT EAT

Photo by Joel Sartore, Nat Geo Image CollectionEach spring, guided by the full moon, hundreds of thousands of horseshoe crabs scour the beaches of the U.S. Atlantic to lay their eggs. For hungry birds, it’s a cornucopia. For pharmaceuticals, it’s a crucial resource for ensuring the safety of human medicines.

“Every pharmaceutical company in the world depends on these crabs. If you think about it, it’s amazing how much we depend on this primitive creature,” says Barbara Brummer, state director of The Nature Conservancy in New Jersey.

Capturing crabs and extracting their blood is a lengthy process, and the resulting lysate costs more than $13,000 a liter. In 2016, a synthetic alternative to crab lysate, recombinant factor C (rFC), was approved as an alternative in Europe, and several U.S. pharmaceuticals also began using it.

But on June 1, 2020, the U.S. Pharmacopeia, which sets scientific standards for drugs and other products in the United States, refused to include rFC on equal footing with crab lysate, claiming it has not been proven safe.

The history of the peekytoe crab, like its name, is interesting. These are Maine rock or sand crabs, which were practically a discarded product of the lobster fishery before a brilliant marketing movement changed their name to “peekytoes” around 1997. They are classified as Cancer irroratus, also known as bay crab and rock crab .

They cannot be shipped live. Picking the meat to remove all shell pieces and strict adherence to freshness makes good pickers in high demand among chefs who prefer peekytoes. Peekytoes are caught in waters 20 to 40 feet deep in traps baited with pieces of fish. They are not to be confused with Jonah crabs.

Maine residents most often in peekytoe crab meat cut up and mixed with mayonnaise and served on crab rolls or as crab cakes. Also excellent in sauces and creams, peekytoe crab meat can be used in virtually any recipe where crab is called for.
